Fall Favorite: Oven-Seared Chuck Roast

When the weather cools off, there’s nothing better than the smell of a roast in the oven. This simple, flavorful recipe turns one of our CR Angus Ranch chuck roasts into a tender, juicy centerpiece perfect for a cozy dinner at home.

Ingredients

  • 1 CR Angus Ranch Chuck Roast

  • Avocado or olive oil

  • Kosher salt

  • Black pepper

  • Paprika

  • Garlic powder

  • Onion powder

  • Dried thyme

  • Optional: rosemary sprigs

Instructions

  1. Preheat your oven to 500°F.
    Pat your roast completely dry with paper towels — this helps it sear beautifully.

  2. Season generously.
    Coat the roast lightly with avocado or olive oil, then season all sides with kosher salt, black pepper, paprika, garlic powder, onion powder, thyme, and rosemary if desired.

  3. Sear to lock in flavor.
    Place the roast on a roasting rack or cast-iron pan and sear in the oven at 500°F for 15 minutes. This step caramelizes the outside and locks in the juices.

  4. Slow roast.
    Reduce oven temperature to 300°F and continue cooking for 45–55 minutes, or until the internal temperature reaches:

    • 145°F–150°F for medium-rare

    • 155ºF-160°F for medium

  5. Rest and slice.
    Remove the roast from the oven, tent loosely with foil, and let rest for at least 10–15 minutes. This allows the juices to redistribute.

  6. Serve.
    Slice thinly across the grain and enjoy tender, perfectly seasoned roast beef with your favorite sides — mashed potatoes, roasted vegetables, or a warm slice of sourdough bread.
